Quick Tostada Recipe!

Ingredients:

Corn or Flour Tortillas or pre-made tostada shells

Bean of choice (recommended: black, pinto, refried)

Shredded cheese of your choice (recommended: mexican blend, three cheese blend, cheddar, monterey jack)

Protein of choice (e.g., chicken, ground beef, tofu, alternative meat)

Toppings of choice (e.g., olives, onions, salsa, cilantro, sour cream, jalapenos, avocado)

Seasonings: salt, black pepper, taco seasoning

Optional: oil for frying tortillas if making them at home (e.g., vegetable or canola oil); salt and pepper


Equipment:

Medium pot

Medium saute pan

Tongs

Spoon

Knife

Instructions:

  1. If electing to make tostada shells at home: fill pot with oil (about 1-2 inches from the bottom of the pot) and heat until hot

    1. You can test your oil by dipping a little edge of a tortilla in the oil and see if it bubbles

    2. You want the oil hot so that it immediately bubbles when you place tortilla in it, but not so hot that it starts to darken too quickly

  2. Fry tortillas until they are golden brown and crunchy; set aside

  3. In a medium saute pan, heat over medium heat with about a tablespoon of oil (note: you can use some of the frying oil you just used, but be careful when transferring - it's still hot).

  4. Cook your protein of choice until cooked through and season with salt, black pepper, and taco seasoning (note: go easy on the salt if your taco seasoning already has it).

  5. Warm beans of choice - canned beans are already cooked, so you just need to warm them up, which is why the microwave is a quick and easy option here

  6. Prep all your other toppings of choice (e.g., cut avocado, cut onions)

  7. Assemble - we recommend placing something like the beans down first (especially if they are refried) as this gives a nice base layer for all the other toppings to stick to

  8. There is no right or wrong way to construct these - add what you like or eliminate what you don’t - Enjoy!
